Notice period is not there to brush up your skills. It is there to handover the responsibilities to other employees for business continuity.

Your narrative sounds like one sided story. Employer might have enough levers to win either way. We do not even have seen the full offer letter stating terms and conditions. We cannot just take the face value of what you are just saying.
